This task of turning food production into an assembly line with the customer leading the decisions is simple yet genius. Some benefits of this style of food production include: people with allergies knowing for certain that what they are eating doesn’t accidentally have substances they are allergic to mixed in; customers get to determine how much of an ingredient they want in their meal; customers receiver their food as soon as they have finished ordering. As a gluten free vegetarian (and a broke college kid), this is definitely a huge incentive for me when choosing a place to eat. Trying to find a place that is cheap and accommodates my allergies is very difficult and even when I do, sometimes the food isn’t actually gluten free. Being able to choose the specifics of my meals is a huge deal and allows me to eat without fear of future stomach pains.

Not only are there logical benefits to this assembly line/glass window display style of production, there are also emotional benefits to the customer. In my opinion, by being able to specialize my meal, makes one feel more connected to the food they are eating and the store where they ordering from. This allowance of choice also provides a simple way for customers’ voices to be heard by “Big Business.” As well, this allows for everyone to get exactly what they want regardless of differences in taste and dietary preferences among customers. Thus, this form of food production is a great innovation for the fast casual restaurant industry.
